RECIPE TIME!

these two recipes are my two faaavorites right now, so i was so excited that a couple people asked for them in the comments :)


Black Bean Brownies
:

OK, so easy. you just take a can of black beans and drain all the gssro, black bean-y water out. i rinsed it a couple times too. put those in the blender. then i cleaned out the can really well, filled it with water, and dumped that in the blender. blend blend blend. it'll be all mushy and gross-looking when it's done. pour that into a miking bowl, then add in your favorite packet of brownie mix. do NOT add in any of the oil or eggs or milk or whatever it calls for. then just bake it at 350 until a toothpick comes out clean! these brownies are super moist and fudge-y and sooo good. you still get all the sugar and everything from the brownie mix, BUT you're eliminating oil and eggs and adding some good fiber in there. fiber = good digestive health = good weight loss.

Vegan Chocolate Cake (otherwise known as "wacky cake"):

i cannot claim this recipe!! i got it from my neighbor and good friend stacy. it's so so good though, and i don't think she'd mind one bit that i'm passing it along.

1 1/2 c. flour

1 C. sugar
3 T. unsweetened cocoa
1 t. baking soda

1/2 t. salt

1 t. vanilla

1 t. vinegar

5 T. vegetable oil

1 C. cold water


Mix all the dry ingredients in a large mixing bowl. Make 3 wells (little holes in the dry mix). Pour the vanilla into one, the vinegar in another, and the oil in the 3rd. Pour the cold water over the top and stir until moistened. Spoon the batter into an 8x8 pan and cook at 350 for 25-30 minutes; it should spring back when touched lightly with your finger. DO NOT undercook...i thought it was done the first time i made it, and then it sunk in the middle and was just gross.
