our vegan evening

my mom got back into rexburg from montana on friday evening.
we spent the day saturday in the store,
and then that evening...she cooked dinner for us.
if you know anything about my mom, you know what that means...VEGAN!
she made a soup out of all different kinds of root vegetables (beets, potatoes, onions, etc), a salad full of processed veggies and sauerkraut, & a main dish of pumpkin seeds sauteed in sesame and olive oil with garlic and onions.
it was SO GOOD.
dave and shpitty weren't nuts about the soup (even though i liked it just fine), but everyone agreed that the seeds and salad were to die for.
after dinner, my mom zoned my face (which is what she went to montana to learn) and my feet. it was...wonderful. seriously, the best night ever. healthy food, zoning, & getting to chat with my momma.
oh, & for dessert....we had strawberries mixed in with coconut bliss ice cream.
coconut bliss ice cream had only 4 ingredients: organic coconut milk, agave syrup, vanilla extract, & vanilla beans. it is seriously the most delicious, refreshing summer dessert EVER.
we're obsessed now.

i'm definitely inspired to start eating healthier :)
